Bluegrass Banana Bread


--2 or 3 overripe bananas (black skins; bananas don't

    develop full flavor for baking until they REALLY ugly)

--1 egg

--2 boxes Jiffy muffin mix (blueberry, or apple-cinnamon)

Heat oven to 350. Peel the bananas onto a plate and mash them thoroughly with a fork. Break the egg into a cup and beat it up with the fork. Dump the muffin mix into a bowl, add the bananas and beaten egg, and mix it thoroughly with the fork. Add a dollop (1/4 cup or less) of milk, buttermilk, water, beer, or bourbon if it seems too dry. Pour into two small
(3 x 6) loaf pans sprayed with Pam. Bake 30-35 minutes. Or you can use a standard loaf pan, and bake it a little longer.

I invented this when confronted with some bananas I didn't want to throw out, but also didn't want to make scratch banana bread. You can toss in a handful of raisins or chopped nuts, if you like.
